Instant Pot Macaroni and Cheese

I feel like I need to say upfront that I am not a food blogger. I don’t take beautiful pictures of food all throughout making it nor do I claim to come up with any of this stuff on my own.  To be honest, I don’t really love to cook.  I cook because my family needs to eat and if I didn’t do it we would eat a lot of pizza, hot dogs and french toast.

I wrote earlier about my new love for my Instant Pot and my quest for some new recipes.  This last week I tried a recipe I had found awhile ago for macaroni and cheese and it was really good!  You can find the original recipe here. I did change a few things just because of what I had (or more precisely, didn’t have) on hand.  

Now the thing about an Instant Pot is it is basically an electric pressure cooker.  And while there are some things that are WAY faster to cook, the cooking times on things is a little deceiving. For example. you will see in my direction that the pasta cooks for 4 minutes.  What?!? Only 4 minutes you think.  But hold on….the pressure needs to build in the machine before the 4 minutes actually starts.  And then when the 4 minutes is up you have to wait for a bit for the pressure to be released.  So there is some time that isn’t built in when looking at recipes.  BUT, when I went to cook the pasta, I didn’t have to think about it at all or stir it once.  So, there is some ease you gain because of that.

Anyway, here is the recipe I ended up doing.

Ingredients

  • 4 cups of water
  • 16 oz. package of pasta
  • 3 Tablespoons of butter
  • 1 cup milk
  • 2 1/2 grated cheese

Directions

  1. Add water, pasta and butter into the instant pot and set on manual for 4 minutes.

 

 

 

 

 

 

 

 

2.  Once the pasta is ready, stir in the milk and grated cheese until the cheese is melted.

 

Everyone loved the end result but it made a really big batch and we have been (and will be) eating leftovers for awhile. I don’t add salt to anything I cook when I am cooking for just us because Joe and Taelin add salt to everything they eat so I try to limit how much I use during cooking.  I am sure Gordon Ramsey would not approve in anyway.  Oh well.  I did end up added pepper and it was super yummy.

This recipe was super easy to make and made everyone at the table happy making it a win/win!
